This dish tastes like a dessert, really.
And it’s so easy to make!
You will need:
- 2 onions
- 3 tablespoons of sugar
- 300g of chickpeas (raw, around 700g if already cooked)
First of all, soak your chickpeas for 24 hours (or at least 12 hours). Cover them with a lot of water as they will absorb it and grow. A lot.
When you are ready to cook, rinse your chickpeas, cover them again with water, bring them to a boil then reduce the fire and let them cook gently for 30 minutes. You can add a teaspoon of bicarbonate of soda to soften them and help your digestion.
While the chickpeas are cooking, slice the onions and caramelize them in a pan with a bit of oil. Add the sugar and cover with water. Let them cook for 25 minutes (the water will evaporate, pay attention not to burn the onions).
When everything is cooked, put the chickpeas without the water (but keep the water) in a food processor or a blender, add the onions and begin to mix. You may need to add a bit of water to make it more creamy, use the cooking water you kept. Mix again and add more water of needed: it depends on the texture you like best!
Then, let it cool or eat while it’s still warm!
You can keep it in the fridge for up to 5 days in a closed box.
Serve with raw veg (or even apple!), bread or as a salad side.

Adding sugar to the onions is not mandatory but help to caramelize them. You can also add salt and other spices to adapt this hummus to your tastes.
